Dulce de Higo with Cheese

Dulce de higo (sweet fig) is a traditional Ecuadorian dessert served with cheese. Thanks to the abundance of figs in Ecuador, this sweet treat became a tradition in family homes, among street vendors, and in restaurants.

The preparation process is long, but that’s what gives it great flavor. Fresh, ripe figs are used; they should not be overripe. They are soaked in water overnight, and the next day, they are boiled with baking soda. Then, brown sugar is added, boiled again, and left on low heat for several hours. You’ll see that the result is worth it.
