Minas Cheese, or Quiejo Minas, is a traditional cheese in Brazil, originating from the state of Minas Gerais. It is a fresh cheese, with a firm texture, a bit crumbly, and with a mild and slightly salty flavor. It can be enjoyed in sandwiches, charcuterie boards or in the popular Romeo and Juliet dessert, which consists of slices of Quiejo Minas served with guava paste (giobada).
