Preparation:

  1. Cook pasta in boiling water until desired consistency is reached. Drain the pasta and let it cool. Cut the Queso de Freir into 1 inch thick cubes and fry until they are a crispy golden brown. Set them aside to cool. Rinse the cherry tomatoes and cut them in half length wise. In a large bowl, mix the pasta, cheese, cherry tomatoes, and pesto sauce. Garnish with a leaf of basil.
