Your favorite Pesto Sauce (or make your own from scratch)
Cook pasta in boiling water until desired consistency is reached. Drain the pasta and let it cool. Cut the Queso de Freir into 1 inch thick cubes and fry until they are a crispy golden brown. Set them aside to cool. Rinse the cherry tomatoes and cut them in half length wise. In a large bowl, mix the pasta, cheese, cherry tomatoes, and pesto sauce. Garnish with a leaf of basil.
