Queso Fresco Flan

Ingredients

  • 1 cup white granulated sugar
  • 4 eggs
  • 1 can sweetened condensed milk (14 oz.)
  • 1 can evaporated milk (13 oz.)
  • 1 package Tropical Queso Fresco Mexicano (10 oz.)
  • 1 teaspoon vanilla extract
  • 8-inch non-stick flan or Bundt pan

Preparation

  1. In a small pot, heat the sugar over a medium-low fire and stir frequently until it turns into golden brown liquid caramel, being careful not to burn it.
  2. Pour caramel into the bottom of a baking mold. Reserve.
  3. In a food processor or blender, blend Queso Fresco until soft. Then add condensed milk, eggs, evaporated milk, and vanilla extract and blend until smooth.
  4. Pour the mixture into the baking mold with the caramel. Cover with aluminum foil and set up for a water bath (bain marie), by putting the mold into a deep and bigger baking pan filled with water halfway to the sides of the flan mold.
  5. Bake in oven at 350°F for 30-40 minutes until a knife comes out clean when inserted.
  6. Cool for 30 minutes before reversing the mold to a serving plate. Serve room temperature or cold.
