These Cheeseburger Bites are a playful, bun-free Keto take on a classic American favorite. Packed with seasoned ground beef, melty Queso de Papa, and topped with pickles and sesame seeds, they deliver all the savory, tangy flavor of a cheeseburger in a bite-sized form. Baked in mini muffin tins, they turn golden around the edges while staying juicy inside. Perfect for game days, party platters, or a high-protein snack that feels indulgent without the carbs.

Ingredients

  • 1 lb ground sirloin 
  • 2 cups shredded Tropical Queso de Papa, for the base
  • 1 cup shredded Tropical Queso de Papa, for topping
  • 1⁄2 cup chopped onion
  • 3/4 teaspoon kosher salt, divided 
  • 3/4 tsp freshly ground black pepper 
  • 1/2 tsp garlic powder
  • 2 tsp Worcestershire sauce
  • Pickle slices, chopped or halved
  • Sesame seeds, for garnish

Sauce:

  • 3⁄4 cup mayonnaise
  • 2 Tbsp sweet pickle relish 
  • 1 Tbsp yellow mustard
  • 1 Tbsp white vinegar
  • 1 Tbsp finely chopped onions 
  • 2 tsp sugar
  • 1⁄2 tsp smoked paprika 
  • Salt & pepper to taste

Preparation

  1. Heat the oven to 400°F. Lightly coat a 24-cup mini muffin tin with cooking spray or oil.
  2. To cook the filling, place a large skillet over medium-high heat. Add the ground sirloin and break it up as it cooks. Sauté until no longer pink, about 5 minutes. Season with salt, pepper, garlic powder, and Worcestershire sauce, stirring to coat evenly. Remove from heat and allow to cool slightly.
  3. Layer the bites: Add about 1 tablespoon of shredded Queso de Papa to each muffin cavity, pressing it gently into the base. Spoon the cooked beef mixture evenly into each cup. Add a small piece of pickle on top, then finish with the remaining shredded cheese. Sprinkle sesame seeds over each bite.
  4. Bake for 15–18 minutes, until the cheese is fully melted and the edges turn golden and slightly crisp.
  5. Let the bites rest in the pan for 3–5 minutes to firm up. Carefully lift them out and transfer to a paper towel–lined plate.

Sauce:

  1. In a small bowl, stir together all sauce ingredients until smooth. Cover and refrigerate until ready to serve.
