  1. Preheat the oven to 350°F.
  2. Slice the Queso Blanco block horizontally.
  3. Lay one sheet of phyllo dough on a clean surface and brush the full sheet with olive oil.
  4. Place one piece of Queso Blanco at the edge of the phyllo dough nearest you, centered along the edge. Fold the sides of the dough over the cheese.
  5. Brush olive oil over the areas of the dough that haven’t been brushed yet.
  6. Continue rolling the cheese in the phyllo dough, working it away from you, until you reach the end of the sheet.
  7. Brush the top of the roll with more olive oil.
  8. Place the roll seam-side down on a baking sheet and sprinkle with sesame seeds.
  9. Bake for about 20 minutes or until the dough is crispy and golden.
  10. Remove from the oven and drizzle with honey to taste.
