Caesar Salad with Fried Cheese Croutons

This Caesar Salad gets a bold upgrade by swapping traditional bread croutons for golden cubes of Tropical Queso de Freír. The fried cheese forms a crisp exterior while staying tender inside, bringing rich flavor and satisfying texture to the cool, crunchy romaine. It’s also a protein-packed alternative to carb-heavy croutons. The creamy dressing keeps the classic Caesar tang and depth, while the crispy cheese makes every bite feel hearty and indulgent. Simple enough for a weekday, impressive enough for guests. 

Ingredients

  • 1 large head romaine lettuce, washed, dried and torn into pieces
  • 1 cup Tropical Queso de Freír, cut into bite-size cubes
  • ½ cup vegetable oil (for frying cheese)
  • 2 eggs, room temperature
  • 6 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 tbsp finely minced anchovies (or to taste)
  • A few drops Worcestershire sauce
  • Salt, to taste
  • Freshly ground black pepper

Preparation

  1. To make the croutons, pour the vegetable oil into a wide skillet and heat over medium. Add the cubes of Queso de Freír in batches, turning them gently so they brown evenly on all sides. Once golden and crisp, remove and place on paper towels to drain. Set aside.
  2. Prepare the eggs: Using a pin, carefully pierce the wider end of each egg. Bring a small pot of water to a boil, then lower the eggs into the water and cook for 60–90 seconds. This brief cooking firms the whites slightly while keeping the yolk soft. Remove the eggs, crack them into a mixing bowl, and be sure to scrape in any egg white that may cling to the shell.
  3. Make the dressing: With a fork or whisk, beat the eggs until blended. Slowly add the lemon juice, then gradually drizzle in the olive oil while whisking continuously to create a smooth dressing. Stir in the minced anchovies and a few drops of Worcestershire sauce. Season with salt and plenty of freshly ground black pepper. Taste and adjust as needed.
  4. Assemble the salad: Place the romaine lettuce in a large bowl. Add the dressing and toss gently until the leaves are coated. Top with the warm fried Queso de Freír cubes and give a light toss before serving. Serve immediately.
