This recipe will solve any dinner fix; it’s a delightful vegetarian main dish for your family and guests (and most likely, you have the ingredients in your pantry). Delicious and crispy fried Queso de Freír on top of a tasty spicy tomato gravy and chickpeas. Simple, scrumptious, and full of protein. Enjoy!
Ingredients
- Vegetable oil for frying
- 10 oz. Tropical Queso de Freír, sliced
- 1 yellow onion, thinly sliced
- 4 garlic cloves, finely chopped
- 1 teaspoon ground cayenne pepper
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon granulated sugar
- 1 can diced tomatoes
- 1 can chickpeas, drained
- Cilantro to serve (optional)
Preparation
- In a deep pan or skillet, pan fry the Queso de Freír slices in oil for 1 ½ minutes on each side, until golden on both sides.
- On medium heat, use the same pan to cook the onion with chopped garlic and stir. Add cayenne pepper, turmeric, ginger, and cumin. Stir then add the sugar followed by the can of tomatoes and chickpeas. Mix well.
- Cover and cook for 8 minutes on medium heat.
- Top with the slices of the Queso de Freír.
- You can serve it with cilantro on top and rice on the side.
