Mexican Grilled Street Corn

Street Corn is a Mexican delight. You can find vendors on Mexican streets attracting people at all times. Warm and perfectly tender corn with a wooden stick to hold it is generously covered with mayo or cream, crumbled cheese, chili powder (sometimes very spicy), and finished with lime and salt.   1. Brush the corn with the olive oil and place on a hot grill. Grill the corn on all sides until all of the sides are charred. (About 6-8 minutes).
  2. Coat all sides of the grilled corn with mayo, then Crema Mexicana.
  3. Sprinkle chili powder to taste, and top with Mexican Queso Fresco. Serve with a lime wedge.
