These Arepas de Choclo with Cheese bring together the natural sweetness of Tropical Sweet Corn Arepas with the salty, savory bite of cheese. Using two cheeses adds contrast in texture: Tropical Queso de Freír turns golden and crisp, while Tropical Queso Blanco stays soft and fresh. Finished with a drizzle of spicy honey, it’s a simple platter full of flavor that works for any casual gathering.
Ingredients
Spicy Honey:
- ¾ cup honey
- 2 tablespoons dried chili flakes
- 1 tablespoon sriracha or other hot sauce

Prepare the Spicy Honey:
- 1. Combine honey, chili flakes, and sriracha in a small saucepan.
- 2. Warm over medium heat just until small bubbles begin to form.
- 3. Remove from stove and let infuse for 10 minutes, adjusting time for desired heat.
- 4. If the honey thickens, rewarm briefly in the microwave (about 15 seconds) or on the stove until fluid.
- 5. Strain into a clean glass jar to remove chili flakes and stop the infusion.
- 6. For presentation, stir in a pinch of fresh chili flakes if desired.
Prepare the Cheese and Arepas:
- 1. Cut Queso de Freír into ½-inch slices.
- 2. Lightly grease a pan and place over medium-high heat.
- 3. Sear the cheese slices for 1–2 minutes per side until golden brown.
- 4. Transfer to a plate and cut each slice into quarters.
- 5. Cut Queso Blanco into bite-size pieces.
- 6. In the same pan, warm the arepas according to package directions and cut into bite-size triangles. You can use some butter or oil if preferred.
- 7. Arrange arepa triangles on a large platter, top with a mix of the two cheeses, and drizzle with spicy honey.
- 8. Serve and enjoy immediately, while they’re warm and soft.
