Ingredients
- 1 lb ground sirloin
- 2 cups shredded Tropical Queso de Papa, for the base
- 1 cup shredded Tropical Queso de Papa, for topping
- 1⁄2 cup chopped onion
- 3/4 teaspoon kosher salt, divided
- 3/4 tsp freshly ground black pepper
- 1/2 tsp garlic powder
- 2 tsp Worcestershire sauce
- Pickle slices, chopped or halved
- Sesame seeds, for garnish
Sauce:
- 3⁄4 cup mayonnaise
- 2 Tbsp sweet pickle relish
- 1 Tbsp yellow mustard
- 1 Tbsp white vinegar
- 1 Tbsp finely chopped onions
- 2 tsp sugar
- 1⁄2 tsp smoked paprika
- Salt & pepper to taste
Preparation
- Heat the oven to 400°F. Lightly coat a 24-cup mini muffin tin with cooking spray or oil.
- To cook the filling, place a large skillet over medium-high heat. Add the ground sirloin and break it up as it cooks. Sauté until no longer pink, about 5 minutes. Season with salt, pepper, garlic powder, and Worcestershire sauce, stirring to coat evenly. Remove from heat and allow to cool slightly.
- Layer the bites: Add about 1 tablespoon of shredded Queso de Papa to each muffin cavity, pressing it gently into the base. Spoon the cooked beef mixture evenly into each cup. Add a small piece of pickle on top, then finish with the remaining shredded cheese. Sprinkle sesame seeds over each bite.
- Bake for 15–18 minutes, until the cheese is fully melted and the edges turn golden and slightly crisp.
- Let the bites rest in the pan for 3–5 minutes to firm up. Carefully lift them out and transfer to a paper towel–lined plate.
