Guatemalan Mixtas

Guatemalan Mixtas are basically Guatemalan-style hot dogs, but instead of a bun, the sausage is wrapped in one or more warm corn tortillas with guacamole, Tropical Queso Fresco Centroamericano, cabbage, onion, mustard, and red salsa. They’re sold in street carts across Guatemala and are popular at fairs, parks, and casual gatherings, but also enjoyed as a simple home snack. The use of tortilla instead of a bun, plus avocado and cabbage, gives them that Guatemalan flair.

Preparation

  1. Grill hot dogs.
  2. Meanwhile, warm the corn tortillas in a skillet.
  3. Assemble the mixta by spreading guacamole onto one side of a warm corn tortilla. Add cabbage next to it.
  4. Add some diced onions, then place a cooked hot dog on top of it.
  5. Top with salsa roja and crumbled Queso Centroamericano.
  6. Finish with a drizzle of mustard.
