In this recipe, we add Tropical Mexican Chorizo to give it extra flavor, protein and a touch of spiciness. Only 5 minutes in the oven will make them irresistible and crunchy. And of course, top with pico de gallo, freshly made with tomato, onion, cilantro and jalapeño or serrano peppers.

  1. Remove casings from chorizo; crumble sausage. In 12-inch skillet, over medium-high heat, cook chorizo until well browned on all sides, stirring occasionally.
  2. Preheat oven to 450°F. Toast roll halves. Spread halves with refried beans. Unroll Oaxaca cheese; cut cheese into strips to fit over refried beans. Cook in oven 5 minutes to soften cheese.
  3. To serve, sprinkle crumbled sausage on cheese; top with pico de gallo. Sprinkle with chopped cilantro.
