Queso Blanco Marinated in Tarragon and Garlic

Ingredients:

  • 1 cup tarragon vinegar
  • 2 cups extra virgin olive oil
  • 16oz cubed Tropical Queso Blanco
  • 1 garlic clove, peeled and minced
  • 1 tablespoon fresh tarragon; chopped
  • 1 tablespoon ground pepper
  • 1 baguette, sliced and toasted

Preparation:

  1. Combine all of the above ingredients and put into a jar. Affix a tight lid, and let this sit for a few hours. Strain the oil and pour it over the cheese, cover and marinate for a few hours. Each cheese should be served tapas style, with a toothpick and bread slice on the side.
