Jalapeños and Cheese are always part of a good party. And now, air fryers are making delicious appetizers easier and healthier. These bacon-wrapped cheesy jalapeño poppers have the perfect balance of flavors, textures, and yes, Mexican colors.

In this recipe, we fill the jalapeño peppers with Tropical Shredded Mozzarella and Tropical Queso de Papa, but you can use Tropical Queso Oaxaca or Tropical Sharp Cheddar. All of them will give you melty deliciousness.

Preparation:

  1. Wearing rubber gloves, halve the jalapeños lengthwise to make 12 pieces, Scoop out the seeds and membranes and discard.
  2. In a medium bowl, combine the shredded mozzarella, cheddar, and scallions. Using a small spoon or spatula, fill the jalapeños with the mixture filling. Wrap a bacon strip around each pepper and secure with a toothpick.
  3. Preheat the air fryer to 325 F.
  4. Cook for about 12 minutes, until the peppers are tender, the bacon is browned and crisp, and the cheese is melted. (For a toaster oven-style air fryer, cook at 300 F; the timing remains the same).

Sprinkle with finely chopped chives, or scallions.
