Cheese is naturally high in protein and low in carbs, which makes it a great option for the Keto Diet. The popular “chaffles” (cheese waffles) are a delicious breakfast option, made with only Queso Blanco, egg, and almond flour. Chaffles are fluffy, crunchy, and full of flavor, without the processed white flour, sugar and gluten of higher-carb meals.
This recipe uses chaffles to make a high-protein, low-carb and delicious sandwich with Tropical Mozzarella and Ham. You can enjoy it at breakfast, brunch or anytime!

- Preheat a waffle maker.
- In a bowl, crack the egg, add the shredded Queso Blanco, almond flour and baking powder. Mix well.
- Add half the batter into the waffle maker and cook until “thoroughly done. Repeat.
- Once both chaffles are done, heat a pan on the stove over medium heat.
- Add 1 tablespoon butter. Once the butter is melted place one chaffle in the pan. Top it with shredded mozzarella and 1 or 2 slices of Cooked Ham.
- Close the sandwich with the other chaffle and toast it for 1 more minute on that side, flip and toast the other side for another 1-2 minutes.
- Once the cheese is melted remove from the pan and enjoy!
