The popular “chaffles” (cheese waffles) are a delicious breakfast option, made with only Queso Blanco, egg, and almond flour. Chaffles are fluffy, crunchy, and full of flavor, without the processed white flour, sugar and gluten of higher-carb meals.

This recipe uses chaffles to make a high-protein, low-carb and delicious sandwich with Tropical Mozzarella and Ham. You can enjoy it at breakfast, brunch or anytime!

Preparation

  1. Preheat a waffle maker.
  2. In a bowl, crack the egg, add the shredded Queso Blanco, almond flour and baking powder. Mix well.
  3. Add half the batter into the waffle maker and cook until “thoroughly done. Repeat.
  4. Once both chaffles are done, heat a pan on the stove over medium heat.
  5. Add 1 tablespoon butter. Once the butter is melted place one chaffle in the pan. Top it with shredded mozzarella and 1 or 2 slices of Cooked Ham.
  6. Close the sandwich with the other chaffle and toast it for 1 more minute on that side, flip and toast the other side for another 1-2 minutes.
  7. Once the cheese is melted remove from the pan and enjoy!
