How do you make Ecuadorian Empanadas?

Ecuadorian Cheese Empanadas, also known as “empanadas de viento”, are fried and served hot, sprinkled with sugar, and delicious Ecuadorian Cheese melted inside. Just make sure you close them tightly before frying so the cheese stays put. See the recipe below.

Ecuadorian Empanadas are a delicious appetizer; they are tasty with coffee in the morning, an afternoon snack, or a dessert. They are also quick and easy to make.

Ingredients:

  • 18 empanada discs, pre-made
  • 12 oz of Tropical Queso Ecuatoriano
  • 2 eggs, beaten
  • 2 tablespoons of water
  • Vegetable oil for frying
  • ½ cup sugar

Preparation:

  1. Cut the Queso Ecuatoriano into squares and place two cubes at the center of each empanada disc.
  2. Mix the eggs and water and use this to brush the edges of the empanada discs. This will allow them to seal better. Fold the discs in half, covering the filling, and press down on the edges with a fork or your finger to make sure they are well sealed.
  3. Heat the oil in a frying pan and place the empanadas; you can do a few at a time. Make sure to leave enough room in your pan to turn them comfortably. Fry them until both sides are golden and crispy. Sprinkle sugar over each empanada.
