These Keto Cheese and Egg Muffins are a delicious and wholesome way to start your morning. The great flavor, texture and high protein come from two types of Tropical Cheese, Queso Blanco and Cheddar, as well as the Crema. The veggies add nutrients and color. To top it all off, they’re easy to make and can be enjoyed any morning, whether you’re doing keto, following a workout routine, or just craving a nourishing, simple breakfast.

Muffin pan needed.
Preparation
- Preheat oven to 350°F.
- Spray muffin pan with oil.
- Wash, dry, and dice red bell peppers. Wash and dry spinach and chop it roughly. Tightly fill a cup with the peppers and spinach.
- Put grated Queso Blanco, peppers, and spinach into each muffin tin, about 2/3 full. Split evenly among greased muffin cups.
- Combine eggs and Crema Centroamericana in a glass container, whisk well, and season with salt and pepper.
- Add in the egg mixture and fill each muffin tin 3/4 full. Sprinkle Sharp Cheddar Cheese on top.
- Bake for about 20 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for two minutes and remove from the muffin tins.
