Colombian Breakfast

This Colombian breakfast has everything you need. A delicious combination of two Colombian breakfast classics, the Recalentado and the Perico eggs. Recalentado is the reheating of leftover rice and beans from the previous day’s meal, which is a staple meal in many American homes. Huevos Perico are scrambled eggs mixed with onion and tomatoes. Both plates feature the popular arepas topped with cheese, so use our authentic Tropical Arepa Blanca with Quesito Colombiano.

Ingredients

  • Eggs
  • 8 eggs
  • 2 medium tomatoes, finely chopped
  • 2 tablespoons of olive oil
  • 2 stalks of green onion, chopped
  • Salt to taste
  • Arepa Blanca
  • Quesito Colombiano
  • Rice and Pinto Beans

Preparation

  1. In a medium skillet, heat the oil over medium heat. Add the tomatoes and green onion. Cook for about 5 minutes, stirring occasionally.
  2. Meanwhile, in a small bowl, beat the eggs and salt.
  3. Pour the eggs into the skillet with the tomato mixture and cook over medium heat.
  4. Stir until the eggs are fully combined with the tomato and onion. Cook for about two more minutes or until the eggs reach desired consistency.
  5. Serve with an Arepa Blanca topped with Quesito Colombiano and a side of rice with pinto beans.
