Meats and Seafood Fresh Chorizos The Flavor of Mexico

Tropical Mexican Chorizo is a traditional Mexican-cured pork sausage.  It is seasoned with garlic and annatto as well as paprika, which gives it a classic red color.  Serve it with eggs or as a filling for quesadillas or stuffed peppers. There are many ways and possibilities to use chorizo ​​in the kitchen.

Chorizo is pronounced as “chuh-REE-zoh”.

What is the difference between Mexican Chorizo ​​and other sausages?

Tropical Mexican Chorizo ​​includes achiote and paprika, which gives it that intense red color. This chorizo ​​is made with pork meat.

Tropical Chorizo Picante (Spicy Chorizo) ​​includes paprika and red chili peppers, which in addition to the red color, make it deliciously spicy. This chorizo ​​is made with beef and pork.

Achiote (annatto seeds) is a very common ingredient in Mexican cuisine made of ground annatto seeds and spices like cumin, pepper, coriander, oregano, cloves, and garlic. The word achiote comes from the Nahuatl “achiotl”, which means "red tincture”. As the name says, it is used to add red color naturally. It is essential in traditional Mexican foods such as cochinita pibil, al pastor or adobo meat, and chorizo.

How is Mexican Chorizo ​​used?

Mexican Chorizo ​​always has to be well cooked before eating. First, crumble it slightly and then heat it in a pan with a bit of oil. You will see and smell when the chorizo ​​is done. If you prefer, you can cook it until it is golden and crispier.

In Mexico, there are recipes in which chorizo ​​is the star ingredient. Chorizo and eggs (huevos con chorizo) is a traditional breakfast. Chorizo ​​potatoes (papas con chorizo) can be a side to any meal, and is a classic filling in quesadillas and “tortas” (a traditional sandwich). And Queso Fundido with chorizo ​​is found in any taquería accompanied by corn or flour tortillas to enjoy in mouth-watering tacos. They are very simple dishes, but the chorizo ​​gives the eggs, potatoes and cheese a great flavor and some color.
